Ham and Cheese Pinwheels
No one wants to spend all day in the kitchen, so it's easy summer snack recipes to the rescue. Pinwheel sandwiches make a tasty and super easy summer snack.
Ingredients
- 4 flour tortillas
- 8 oz whipped cream cheese
- 8 slices deli ham
Instructions
- Spread cream cheese over one side of each tortilla.
- Top each tortilla with two slices of ham.
- Roll tightly and slice.
Hummus and Veggies
Ingredients
- 1 (15 ounce) can garbanzo beans, drained
- 1/2 cup tahini
- 1/2 cup olive oil
- 1/2 teaspoon ground cumin
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Process all ingredients in a food processor until smooth.
- Serve cold with sliced vegetables and toasted pita bread.
Hot Wings
Ingredients
- 4 pounds chicken wings
- 4 tablespoons Cajun seasoning
- 1 (5 ounce) bottle hot sauce
Instructions
- Sprinkle Cajun seasoning over wings.
- Pour hot sauce over wings, turning to coat.
- Refrigerate at least two hours.
- Bake at 400 degrees for 20 minutes. Turn and cook for another 15 minutes or until done.
Turkey Wrap
Ingredients
- 4 flour tortillas
- 8 slices deli turkey
- 4 leaves Romaine lettuce
- 1 tomato, sliced
- 1/2 cup Ranch dressing
- 8 slices Swiss cheese
Instructions
- Spread Ranch dressing on each tortilla.
- Top with two slices of turkey, two slices cheese, one leaf of lettuce, and sliced tomato. Roll up tightly.
Ingredients
- 1 cup plain yogurt
- 1 tablespoon honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
Instructions
- Combine all ingredients in a bowl, stirring until well blended.
- Serve cold with assorted fruit.
Easy Veggie Pizza
Ingredients
- 1 ready-made pizza crust, such as Boboli
- 1 cup mozzarella cheese
- 1/2 cup marinara sauce, such as Boboli
- Assorted vegetables to taste: corn, mushrooms, red onions, bell peppers, tomatoes, artichokes
Instructions
- Spread marinara sauce over crust.
- Add 1/4 of the cheese. Layer veggies over the cheese. Top with remaining cheese.
- Bake at 450 degrees for 8 minutes.
Easy Summer Snack Recipes: Chips
Cheese Dip Ingredients
- 1 lb Velveeta cheese product
- 1 can Rotel tomatoes and green chilis
Instructions
- Chop Velveeta and place in a large bowl.
- Pour Rotel, including juices, over cheese.
- Microwave, stirring frequently, until cheese is melted and heated through.
- Serve with chips.

Potato Wedges
Ingredients
- 8 baking potatoes, scrubbed, cut into wedges
- 1/2 cup olive oil
- 2 tbsp. Parmesan cheese
- Salt, pepper, and garlic powder to taste
Instructions
- Mix dry spices and oil. Dredge potatoes in mixture.
- Place potatoes in a single layer in a baking dish. Top with cheese.
- Bake at 375 degrees for 45 minutes or to desired doneness.
Cheese and Grape Skewers
Ingredients
- 8 oz cheddar cheese, cubed
- 24 grapes of assorted colors
Instructions
- Alternate grapes and cheese on toothpicks or skewers. Serve with yogurt or marshmallow dip.
